pork with red chile mole




after the cover of the latest Saveur came through my tumblr feed i knew i needed to run out and buy it. i knew i'd had mole once or twice but couldn't remember if i liked it or not. the recipe looked interesting so i decided to try it out.


i toasted chiles and nuts, then blended them with chocolate, raisins, spices and boiling water. then i seared the pork. i adapted the recipe a bit and combined it all into my slow cooker so i could run some errands and come home to dinner!



i also made the mexican rice in the magazine. ultimately i think i like the rice more. the mole was really good, but not something i want to make and/or eat all of the time. now i just need to figure out what to do with all of this mexican chocolate...
