beets!


i have harvested and pickled all of my beets. i can't tell you how good it felt to start these as seeds in the ground a few months ago, tend them daily, and then harvest and put them up. this is the first time i've been able to see a food life cycle through from beginning to end like this in my own garden and kitchen. well, i guess technically it isn't over yet, since i haven't eaten them...


i did two different types of pickles. these are traditional pickled beets.


these are spicy pickled beets and onions. i love how some of the jars take on an hombre color to them if there's one section with more or less beet coloring.


these are chiogga beets which are lighter and bred to have white rings inside them. because of their lighter color, the jars aren't nearly as red as regular pickled beets. i kind of wish they were darker. however, after peeling all of those beets my hand weren't stained at all, which is pretty amazing. i haven't tasted any of them yet. six weeks until they're ready to be consumed. i can hardly wait!
