also, i took a lactofermentation class this weekend from Chris at Lost Arts Kitchen. we prepared sauerkraut, kimchee, pickled grape tomatoes, mayo and ketchup all using lactofermentation techniques. i really enjoyed learning how to make everything, but the best part was getting to taste batches that she had made previously. the sauerkraut and the mayo were my favorites. i can't wait to get some fermenting going in my kitchen!
